Ginger and Honey Girl Power Scones & SPICE WORLD
March is Women’s History Month, so to kick things off, I thought I’d start with the Spice Girls. The Spice Girls exude girl power and female friendships, and they were extremely influential in my early years. I listened to their music nonstop, wore platform shoes similar to Baby Spice’s, had a blunt bob like Posh Spice, and was lucky enough to go to one of their concerts. So, you can imagine my excitement when Spice World came out.
Okay, so Spice World isn’t the greatest movie ever made. I didn’t – and don’t – care. I remember watching it several times and just loving getting to see the girls in action instead of only listening to them on a CD (remember the days of Tower Records and purchasing CDs?). It’s a fun movie perfect for reminiscing on childhood, having a good laugh, and getting in the Girl Power spirit. The movie also takes place in London, so it’s a hard backdrop to beat.
Keeping in line with Britain and popular food from across the pond, these Ginger and Honey Girl Power Scones are a delicious pick-me-up. And yes, the ginger is a nod to Ginger Spice. These scones hold their shape well, so you can count on them withstanding ample butter, jam, honey, or glaze.
Though a typically denser baked good, the flavor of these scones are laced with the essence of spring, in turn making them taste a little more lightweight. These ones in particular are a dependably wonderful breakfast, but you won’t regret eating them as a midday snack.
While scones are typically wedge-shaped or round, I just knew that you can’t go wrong with scones that are spelled out in empowering mottos. I’ll take Girl Power with a side of scones any day.
Ginger and Honey Girl Power Scones
Serves: 10 | Cooking time: 45 minutes
Ingredients
2 cups unbleached all-purpose flour
1 tablespoon baking powder
3 tablespoons light brown sugar
1/2 teaspoon salt
1 teaspoons ground ginger
½ teaspoon cinnamon
5 tablespoons chilled, unsalted butter, cut into cubes
¼ cup honey
1 cup heavy cream + 2 tablespoons for brushing over scones
Method
Pre-heat the oven to 425°F.
Add flour, baking powder, brown sugar, salt, ginger, and cinnamon into a large bowl and whisk together.
Add in the butter cubes to the flour mixture and use your fingertips to pinch the butter together with the dry mixture. You can also use a food processor or blender to mix the butter and flour mixture together. The flour mixture should now resemble coarse meal.
Using a rubber spatula, add in the honey and heavy cream and mix together until a dough starts to form.
Transfer the dough to a lightly floured countertop and knead the dough by hand until it comes together. The dough will be sticky. Pat the dough down until it is about ½" to ¾" thick. Using the letter cookie cutters, cut out Girl Power (or any words of your choosing).
Brush the heavy cream onto the top of the scones. Place the scones onto a parchment-lined sheet tray and bake until scone tops are light brown, 8-10 minutes. Cool on a wire rack or serve warm with butter, honey, and/or jam.
