Eggnog Bread with Rum Glaze & CHRISTMAS VACATION | Part I
One of the best Christmas movies of all time, in my opinion, is Christmas Vacation. There are endless iconic scenes and relatable moments that are so real it hurts. Just from this movie alone you’ll be equipped with hilarious quotes that will last you all season.
In this film, Clark Griswold wants his family to have a perfect Christmas. He goes out of his way to cut down a real tree (from the middle of nowhere) and string lights on the house (so that they have the brightest home on the block). But when Clark’s cousin, Eddie, shows up unexpectedly with his family, he brings chaos with him.
There’s a hysterical scene when Eddie and Clark have a moment in the living room drinking eggnog. After listening to Eddie ramble on, Clark asks, “Can I refill your eggnog for you? Get you something to eat? Drive you out to the middle of nowhere and leave you for dead?”
This scene inspired the Homemade Eggnog and Eggnog Bread. If you’re not into drinking raw eggs, this eggnog bread is perfect for you. Everything is thoroughly cooked, but you still get the eggnog taste with hints of cinnamon and nutmeg. The bread itself is not overly sweet, and the texture is moist while still being bread-like. Combine this flavor with the sweet rum glaze for a real kick.

Eggnog Bread
Serves 10-12 slices | Cooking time: 45-75 minutes
Ingredients
Eggnog Bread
½ stick unsalted butter, room temperature
½ cup granulated sugar
2 large eggs
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
1 ¼ cup homemade eggnog
Glaze
1/2 cup (4 ounces) powdered sugar
2 tablespoons rum
Homemade Eggnog
5 egg yolks1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 ¼ cup heavy cream
1 ½ teaspoon freshly grated nutmeg
5 egg whites*
1 tablespoon sugar
Method
Homemade Eggnog
In the bowl of a stand mixer, beat the egg yolks until lightened in color. Add the sugar and whisk until smooth.
Add the milk, cream, and nutmeg and whisk until combined.
Transfer the mixture to a bowl. Clean out the bowl of the stand mixer, and whisk the egg whites to a soft peak. Add in a tablespoon of sugar, and continue beating until stiff peaks form.
Gently whisk the egg whites into the egg and milk mixture and stir until combined. The top will be foamy. Sprinkle with nutmeg and serve chilled!
Eggnog Bread
Preheat the oven to 350° Grease a loaf pan with butter and set aside.
In the bowl of a stand mixer, mix the butter and sugar until smooth. Add the eggs one at a time, mixing after each addition. Add the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, nutmeg, cinnamon, and salt.
Add a portion of the flour mixture into the butter mixture, followed by a portion of the eggnog mixture. Add more of the flour mixture, then the remainder of the eggnog, and finally the rest of the flour. Mix until smooth and combined.
Add the batter to the loaf pan and bake for 55-60 minutes.
Remove the eggnog bread from the oven once it is golden brown and comes out clean with a toothpick. Allow the bread to cool for 10-15 minutes, and then remove from the loaf pan.
Whisk the rum and powdered sugar together. Drizzle on top of the loaf and let it set. Slice, serve, and enjoy with a cup of eggnog!
