When I first watched Legally Blonde in 2001, I was charmed by its lightheartedness. Since then, I’ve seen this movie too many times to count.

Reese Witherspoon soars in these types of roles, and she was born to play this character. The film centers around sorority girl Elle Woods, who applies (and gets in!) to Harvard Law School after she is dumped by her boyfriend in an attempt to win him back. As usual, things don’t go according to plan, but they turn out much better than Elle could have imagined.

After the breakup with her boyfriend, Elle binges on chocolate and soap operas after hours of crying (as evidenced by her running mascara). Since chocolate heals broken hearts and pink is Elle’s signature color, Pink Chocolate Strawberry Breakup Truffles are a velvety treat to eat while watching Legally Blonde.

White chocolate is the perfect base for a pink hue, due to pulverized freeze dried strawberries. This combination creates a fruity chocolate taste on the tongue without being overwhelming. The strawberry powder on the outside provides that extra burst of tanginess, which is quickly overcome by the smooth chocolate texture.

Pink Chocolate Strawberry Breakup Truffles are easy to make, but they are timely because of the refrigeration requirement. The chocolate has to firm up before rolling it into balls. Add the powder before refrigerating a second time – the warmth between your hands when rolling the chocolate will give the exterior a slight stickiness that will give the strawberry powder something to hang onto. These pink truffles are creamy, sweet, and Elle Woods-worthy.

Pink Chocolate Strawberry Breakup Truffles

Serves: 22-24 | Cooking time: 4.5 hours

Ingredients

  • 1 tablespoon unsalted butter

  • ½ cup heavy cream

  • A dash of salt

  • 12 ounces (2 cups) white chocolate chips

  • ½ teaspoon vanilla extract

  • ½ cup freeze dried strawberries, food processed until powdered + ½ cup freeze dried strawberries for rolling, food processed until powdered

Method

  1. In a small saucepan, warm butter, cream, and salt. Mix until combined, about five minutes.

  2. In a medium sized bowl, add the white chocolate chips. Pour the warm cream mixture over the white chocolate chips and stir until the chips have melted, about 10 minutes. If you need to warm the chips up in the microwave, do so for 20 seconds at a time until melted. Whisk until mixture is smooth.

  3. Add vanilla extract and freeze dried strawberry powder. Whisk until smooth.

  4. Pour the now pink chocolate mixture into a shallow baking dish. Refrigerate for three hours.

  5. After three hours when you're ready to roll the chocolate into balls, take a melon baller and firmly press against the solid white chocolate. Use your hands to sculpt all of the chocolate into balls.

  6. In a bowl or on a flat surface, add the second ½ cup of powdered freeze dried strawberries. One by one, roll each chocolate ball in the powder until fully covered.

  7. Refrigerate the truffles for one more hour. When ready to eat, relax, turn Legally Blonde on, and enjoy these pink chocolate strawberry breakup truffles!
