I became obsessed with cinnamon spice cupcakes when I had my first one last summer - they taste like autumn in a bite. There are many flavors you can use in these cupcakes, such as pumpkin, apple, or gingerbread. However, as a cinnamon lover, I wanted to go with something a little more subtle so that I could still taste the vanilla icing. I used this recipe and made regular sized cupcakes, topped with vanilla icing, and sprinkled with ground cinnamon. I also used these super cute Etsy cupcake papers with polka dots to add make them more fun – I gave some of them away as holiday gifts.
